Northern Lights occupies the bold end of the medium-dark range: structured, confident, and precise. Named for the aurora borealis, this blend has depth and movement — flavors that shift and develop as the cup changes temperature, like watching light move across a night sky.
The medium-dark roast develops toasted grain character up front — a warming, almost bread-like quality — then opens into dark caramel sweetness and bittersweet cocoa richness. A hint of smoke on the finish is subtle enough to add character without dominating. The structure is tight and clean. This is not a sloppy dark roast but a disciplined one.
Northern Lights performs especially well as cold brew, where the low-acidity medium-dark roast and toasted grain body produce a smooth, naturally sweet concentrate that requires no added sweetener. As hot drip coffee, a slightly coarser grind and longer brew time allow the caramel and cocoa notes to fully develop. Roasted in small batches in Kingston, Tennessee, shipped within 24–48 hours of roasting.
